Spring Roll / Rouleaux de Printemps





Ingredients 
rice wrappers
carrots
chives
radishes
cilantro
red peppers
pea shoots
whatever other vegetables you want to try in spring rolls




In my case the pea sprouts, chives, cilantro, and radishes were from my garden. The carrots and red peppers were not.


Directions
1. Cut the vegetables into small pices.
2. Pour boiling water over your rice wrappers to soften them.
3. Place the filling in the middle of the rice wrappers and roll them up to form spring rolls. The trick to this is to first fold the sides towards the middle, then fold the bottom up and roll until you reach the top.



To make the dipping sauce, I used my go-to peanut sauce.
