Massaman Curry


Ingredients
1 onion, chopped
1 inch ginger, peeled and grated
3 cloves garlic, minced
1 head cauliflower, chopped
1 red bell pepper, chopped
1/2 c green beans, chopped
1/2 c carrots, chopped
2 tbsp red curry paste
1/4 tsp cumin
1/4 tsp cinnamon
1/4 tsp cardamom
1/8 tsp cloves
1/4 tsp cayenne
1/4 tsp ground star anise
3 tbsp peanut butter or almond butter
1 tbsp sugar
1/2 tsp salt
1/2 tsp tamarind concentrate
1 c coconut milk
3/4 c water
Rice, for serving

Directions
1) Saute the vegetables in the spices until the onion is soft and translucent.
2) Add the other ingredients and stir so it all mixes together.
3) Cover the pan and cook it another 5-10 minutes until the curry thickens a bit.
4) Serve with rice.
