Corn and Cheddar Pancakes / Crêpes au Maïs et au Cheddar



Ingredients
2/3 c cornmeal
1/2 c flour
1 tsp baking powder
1 egg
1 1/4 c buttermilk
3/4 c cheddar cheese, grated
1 c corn kernels, steamed
Scallions, chopped (optional)
Fresh cilantro (optional)
Salt and pepper, to taste
Oil
Sour cream
Salsa

Directions
1) Whisk everything together except for the oil, sour cream, and salsa. This is your pancake batter.
2) Cook the pancakes in the oil the same way you would regular pancakes. Cook it on one side until you see little bubbles forming, and then flip it over to the other side until it’s cooked all the way through.

3) Serve the corn and cheddar pancakes with the salsa and sour cream.
