Bunny Chow


Bunny chow is a South African fast food dish consisting of a hollowed-out loaf of bread filled with curry. It originated in Durban where there's a large community of people of Indian origin.

Ingredients
1-2 onions, chopped
2-3 carrots, chopped
1-2 potatoes, chopped
1 cup of green beans
2-3 tomatoes, chopped
1-2 chilis, minced
4-5 cloves garlic, minced
1 inch knob of ginger, grated
1 cinnamon stick
3-4 green cardamom pods, crushed
3 whole curry leaves
2 tsp garam masala
1 tbsp curry powder
1 tsp turmeric
1 tsp cumin
Cooked chickpeas
Salt and pepper, to taste
Water, if needed
Bread rolls, any type you like

* You can substitute ground cardamom for the cardamom pods and you can skip the curry leaves if you can't find them.

Directions
1) Mix everything together in a pot and cook until the onions are translucent and the potatoes and carrots are soft. Add water if you need it to keep things from sticking to the bottom of the pot.
2) Fish out your cinnamon stick and curry leaves so you don't accidentally eat them.
3) Hollow out the bread rolls.
4) Spoon the curry into the bread rolls to eat it.
