Wintery Rice / Riz d'Hiver



I don't know what to call this, but it tasted great! Here's the recipe:

Ingredients
2 carrots
2 bunches dark leafy greens (I used swiss chard but you could use something else like kale or collard greens)
1 red onion
salt and ground black pepper to taste
feta cheese, crumbled (as much as you like)
cooked brown rice

Directions
1. Chop all of the vegetables.
2. Caramelize the onion.
3. Add in the carrots cook until they are softened.
3. Add in the greens and cook until they're wilted. You may need to add a little water to make sure the greens don't burn before they cook.
4. Add in the brown rice and feta.
