Chaat


Ok. This recipe is a delicious way to use up the leftover channa masala and the leftover samosas I sometimes have in my freezer.

Ingredients
leftover channa masala (there's a recipe on this blog)
leftover samosas, chopped up (there's a recipe for this on the blog as well)
thin strips of tortillas, fried
hot sauce
mint cilantro chutney (recipe follows)
tamarind chutney (recipe follows)

Directions
1) Heat up your leftovers and fry your tortilla strips in oil so they're crispy.
2) Put a layer of channa masala on your plate.
3) Scatter some chopped samosas and fried tortilla strips on top.
4) Drizzle with the chutneys and hot sauce.

Mint Coriander Chutney
Blend all of this together in a blender, with whichever proportion of mint to cilantro makes you happy:

up to 2 cups mint
up to 2 cups cilantro
one green chili
1/2 onion, optional
2 cloves garlic, optional
a couple tablespoons of lemon juice (this keeps the green color of the chutney)

Tamarind Chutney
2-3 tbsp tamarind chutney
2 cups water
1 cup sugar (jaggery sugar is traditional but I use plain old cane sugar and it's fine)
1/2 tsp cayenne powder
1/2 tsp ground cumin
1/2 tsp ground ginger
half a cup of seedless dates, optional

Stir everything but the dates together in a pan. Simmer it on low heat until it reaches the consistency of maple syrup. This takes about half an hour. Make sure you stir it occasionally so it doesn't burn on the bottom of the pot. If you want to use dates, add them in at the end and blend everything together so it reaches the same consistency.
